Hey everyone, I hope it's cool to share a recipe here! I stumbled upon this anti-inflammatory soup on Pinterest and thought it was worth a shot. It's super healthy and pretty simple to make. Personally, I've added some tweaks like grating in carrot and zucchini for extra veggies. If you’re not feeling chicken, you can totally swap it out for lean chicken mince or go vegetarian with veggie stock and some tofu or tempeh.
Here's the lowdown on what you'll need: 8 oz of cooked chicken breast, 2 1/2 cups of cauliflower florets, one chopped carrot, 1 1/2 tablespoons of grated ginger, a small chopped onion, two minced garlic cloves, 1/2 teaspoon each of turmeric and black pepper, a teaspoon of dried mint, and two tablespoons of olive oil. Don't forget the salt!
To get started, sauté your onion and garlic along with the turmeric and black pepper until everything's nice and fragrant. Then toss in the cauliflower with some broth (just enough to cover it), slap a lid on and let it cook down. After that's cooked for a bit, add in that lovely ginger goodness along with mint and carrot. Blend part of the soup to give it that perfect thickness.
Lastly, stir in your chicken or whatever protein you've decided on. Add more broth if needed for your preferred consistency and let everything heat through just for another minute or so.
Feel free to get creative with the spices based on your preferences! And remember – you can adjust how thick or thin you like your soup by simply altering the broth amount as you go.
